Chocolate & Pistachio Fudge

            Chocolate & Pistachio Fudge

What i did is, i tooked the recipe, modified it, actually microwaved it. Because many of my viewers asked me to post more microwave cake, cookies and sweets recipe after i shared my 5 min microwave mysorepak recipe. So this is for them. And saying this, i made a black forest cake today, you may ask me what is special in that..Yes there is a special thing, it is made in microwave and in 4 mins, frosted and ready to eat in just 30 mins. How cool is that..Will share the recipe tomorrow i hope so..

Ok what i was saying, i took nigella lawson's recipe and microwaved it and cooked it in less than 2 mins, mine got done in 1 min. And this recipe calls for just 4 ingredient, so i am calling this as 4 Ingredient Microwave 2 Min Chocolate Pistachio Fudge Recipe..It is a long name, i know..So this is that simple, give it a try and let me know how it turned out for you..

Ingredients:

Dark Chocolate Chips - 1 cup
Condensed Milk or Milkmaid - 1/3 cup
Butter - 1 tblspn
Pistachio - 1/4 cup roughly chopped

Method:

Line a 12 cm square baking dish with foil or parchment paper and set aside.

Take pistachio in a chopping board and chop it roughly.

Now in a microwave safe bowl, take chocolate chips, butter and condensed milk. Mix once.

Place this in microwave and set the timing for 1 min. Remove it after 1 mins and mix well using a spatula, if the chocolate is not melted completely, then pop it back into the microwave for 30 sec. Remove it give a stir. By this time the chocolate would be melted, if not pop again for 30 sec.

Now add in pista and mix once.

Pour this mix into the baking dish and smooth the top.

Place this in fridge for 1 hour or in the freezer for 30 mins.

Remove it and invert to peel off the foil. Cut into cubes.

Serve.

Notes:

1)If you dont have microwave, just take everything except pista in a sauce pan and heat it gently on stove. Once it is melted add in pista and continue with the remaining process.

2)Dont microwave on one go, first set timing to 1 min, if the chocolate is not melted in that timing, then pop again for 30 more sec. Dont over cook the chocolate.

3)My chocolate melted in 1 min itself.

4)You can add any nuts of your choice.

5)Lining the tray with foil or parchment helps in taking the fudge out of the tray easily.

6)This fudge should be stored in fridge always.

Badam Halwa

Badam Halwa - Diwali Special Recipes

Its monday, I am gonna start this week by sharing a rich sweet recipe to make your week so sweet. This recipe was in my mind for ages. But somehow i postponed it from making, because it is so rich and also very fatty. But nothing can compromise it taste. It is so yummy, how will a recipe using badam, ghee, sugar and all those wonderful stuff go bad.

Halwa is always yummy. Specially this recipe, it is mouthwatering. This is not at all complicated to make, it is so simple. You will never go wrong with this recipe, if you follow my steps. Try to add a good amount of ghee in this recipe, that will make it non sticky and halwa like. I hope you will try this and let me know what you think.

Ingredients:

Badam - 1/2 cup

Sugar - 1/2 cup / 100 grams
Milk - 1/2 cup / 125 ml
Ghee - 1/4 cup / 60 ml
Water - 1/4 cup / 60 ml
Cardamom Powder / Elachi powder - 1 tsp
Saffron a pinch

Method:

Take badam in a bowl and cover it with hot water and soak it for a hour. Now peel the skin off and  add it to the blender and grind it to a smooth paste by adding milk.

Take sugar and water in a non stick kadai and heat it up til it dissolve.

Now add in the ground badam mixture and keep mixing.

Stir this for 5 to 7 mins on medium flame till it gets thick.

Now add in saffron and mix well.

Add in spoonful of ghee at a time and keep stirring.

Once you have added all the ghee, the mixture will start leaving the sides of the pan.

Add in cardamom powder and keep mixing.

It will be little thick, but still be little sticky.

Trasfer this to a bowl and let it cool down.

Once it cools down it will become non sticky and little hard like a halwa.

Serve.
